Hearty Sausage, Potato, and Greens Soup (One pot)

ingredients

  • 3 bunches mustard or turnip greens
  • 3-4 medium onions, chopped
  • 40 oz chicken broth
  • 3 cups potato flakes OR 3 cups chopped potatoes OR a mixture of chopped potatoes and chopped turnips
  • 1 whole kielbasa, chopped
  • 1 qt half-and-half
  • 2 tbsp salt, 3 tbsp ground black pepper
  • 3 cups water

directions

  1. Rinse the greens thoroughly to remove sand. Some folks do this by changing the water a few times, others under running water. If you\\\'re using the turnip greens, save the turnips and dice them to put in the soup with the potatoes
  2. Chop the greens into 1 inch ribbons, cutting across the stem.
  3. Add the kielbasa and chopped onions to a largish soup pot, and cook on medium high until the onions start to become transparent.
  4. Add the chopped greens and cook for another ten minutes covered, stirring frequently. The greens will wilt down.
  5. Add the chicken broth, potatoes/flakes/turnips, chicken broth, water, and salt. Return to a boil, then cover and simmer low for forty minutes
  6. Uncover and stir in the half-and-half and black pepper. Serve up to eight people.
