Pickling Cucumbers
history Cucumbers originated in southern Asia over 10,000 years ago. It was used for food but also for its beneficial skin healing properties. Pickling cucumbers are smaller than slicing cucumbers.
nutrition Cucumbers are mainly comprised of water and are high in Vitamin C (ascorbic acid) and caffeic acid. They are rich in fiber and contain high levels of potassium and magnesium.
storage Store in the refrigerator where they should last for several days. For best quality, use within two days.
