Winter Squash was such an important nutrition source for Native Americans that they frequently buried it with the dead to provide them nourishment in the afterlife. Acorn squash have dark green skin splotched with orange spots. |

Winter Squash has a much longer storage life than summer squash. Many can be kept from 1 week to 6 months. Keep them away from direct light in temperatures between 50-60 degrees. Once cut, place pieces of winter squash in plastic wrap and store in the refrigerator. |
